For me the hardest part about traveling is coming home. I am so in my element in warm, tropical places. We just got back a few days ago from a wonderfully relaxing week in sunny Mexico. This recipe is my attempt at recapturing the essence of beautiful beaches and warm summer nights: Piña Colada Popsicles.
Any other world travelers out there? I have been traveling since I was just a babe in arms. My folks introduced me to world travel early on as my father worked in international imports and exports. I spoke 3 languages and had lived in 3 different countries by the time I was 6 years old. I’m pretty sure that the travel bug is in my genes.
As I got older, I continued to travel on my own and am now partnered with a wonderful man who shares my love of travel. We have been many places together, including beautiful and colorful India. I have also passed the travel bug gene onto my children. My oldest daughter has been to Mexico, Costa Rica, Panama, Nicaragua, and Spain. After graduating high school a couple of weeks ago, she will be leaving this coming September to travel in Central America for 3 months. I will miss her but am 100% aware that it is totally my fault. I wish her the best on her adventures. Have fun, my sweet girl!
I can’t say enough about what traveling has done for me and my personal growth. Seeing the world from so may perspectives has opened my heart and my mind. It has made me a much more compassionate and tolerant person. There is so much to learn from everyone you meet. Wouldn’t you agree?

Popsicles are one of my favorite desserts. They are easy to make and are always so refreshing to eat, especially on a hot day. I only drink Piña Coladas when I am traveling. They are the epitome of tropical places. Nothing pairs better than fresh pineapple and creamy coconut. These popsicles obviously don’t have any alcohol in them (you could add some, if you wanted!) but they are dang tasty. Creamy and rich. Cold and satisfying. And did I mention they are dairy free?

PrintPiña Colada Popsicles (dairy free)
- Yield: 6 small popsicles 1x
Ingredients
- 1 cup pineapple, chopped into pieces
- 1 banana
- 1 cup full fat coconut milk (where to buy BPA and additive free coconut milk)
- 1/4 cup filtered water
Instructions
- Process all ingredients in a blender until creamy smooth.
- Pour into popsicle molds and place in freezer until frozen.
- Enjoy!
