There is nothing better in my mind than the combination of savory and sweet. Imagine the warm sweetness of yams with the salty goodness of bacon. Enough said. These Grain Free Sweet Potato Bacon Waffles are the bomb!
I have to admit: my whole life basically revolves around food. I wake up thinking about what I want for breakfast. I spend time food prepping for the day. I eat a big lunch. I dream about what’s for dinner. I plan for the next day’s meals. I’m a bit obsessed.
And when I like something, I really like it. I have an ongoing love affair with yams and sweet potatoes. I love to make Heavenly Sweet Potato Pudding for breakfast. One of my favorite side dishes is Honey Sesame Yams. I could eat Masala Sweet Potato Bites every day of the week. And Southwest-Style Baked Sweet Potatoes are one of my favorite weeknight dinner recipes.
This recipe was inspired by the super easy sweet potato pancakes my oldest daughter makes in the morning. Just eggs and mashed leftover sweet potato. So simple. So good. And since bacon makes EVERYTHING better, I added some.
You may have seen my recipe for Grain Free Banana Waffles a while back. Those have become a family favorite. I still am “borrowing” my dear friend’s waffle maker, so I thought I would make some more waffles. I’m sort of in love with the waffle maker. I don’t want to give it back. My waffles come out perfect EVERY time. Maybe if I make her a plate of these delicious waffles, she will let me keep it a bit longer.

PrintSweet Potato Bacon Waffles (gluten and grain free, paleo)
- Yield: 3-4 waffles 1x
Ingredients
- 4 eggs
- 1/2 cup dairy free milk of any kind
- 2/3 cup cooked sweet potato or yam, mashed
- 3 tbsp coconut oil, butter, or ghee, melted
- 1/2 tsp vanilla extract
- 1 cup almond flour, packed (I use THIS blanched brand)
- 1/2 cup tapioca flour (like this)
- 1/2 tsp baking soda
- 1/4 tsp unrefined sea salt (I use this one)
- 1/2 tsp cinnamon powder
- 1/4 tsp ginger powder
- 4 strips cooked bacon, chopped into small pieces
- coconut oil (like this) or ghee (like this) for oiling waffle maker
FOR TOPPINGS:
- ghee or coconut oil
- extra bacon
- fresh fruit or berries
Instructions
- Preheat waffle maker (like this one).
- Process eggs, milk, mashed sweet potato, fat of choice, and vanilla in blender until well combined..
- Add almond flour, tapioca flour, baking soda, salt, cinnamon, and ginger. Blend again until completely smooth. Add more milk if batter seems too thick.
- Fold in bacon pieces.
- Brush waffle iron liberally with ghee or coconut oil. Pour batter onto waffle iron. Cook according to waffle maker instructions. All waffle makers are different so keep an eye on the temperature and time.
- Serve immediately with toppings of your choice.

I am allergic to eggs as well. Have you tried using a commercial egg replacer? Or flax meal mixed with warm water? Or apple sauce? These are tricks I use when need to replace eggs in recipes.

I haven’t tried it but I think it should be fine. Maybe do a titch less as it is not as thick as coconut milk. 🙂

I tried these tonight — made a double batch. My kids who do not really like sweet potatoes loved them! They were delicious. I’d probably add more cinnamon next time but YUM. And they cooked up so nicely!

Im doing this tomorrow, got the ingredients on my shopping list and heading out now! I never get sweet potato pancakes to come out that great but I think they’ll crust up great in the waffle iron and not leave too much soft mass in the middle. Thank for the recipe! Just made this. I loved including sweet potato on there.
It does stick to the iron so spray between each round is a must.
Also I found that I had to cook these waffles longer than expected for it to hold together.
I wonder if adding almonds flour will improve the texture.

Hi! I’m just wondering, when you make your mashed sweet potato, do you just cook them and mash with a masher or do you whip them? Do you add anything to the mash? Just want to make sure my recipe comes out as yummy as yours did!!

I usually just mash them with a fork. You can definitely use a masher or a hand blender. 🙂

Saw the comments above, anyone ever try this with an egg substitute? This recipe uses a lot of egg (4) so it makes me leery about subbing it out.

These waffles are the best! I’ve tried a million paleo waffle recipes. They usually end up soggy or sticking to the waffle iron. Not these! And the flavor…amazing! I used vanilla macadamia milk and arrowroot (instead of tapioca) because that’s what I had on hand, and doubled the cinnamon (cause I’m a cinnamon junkie). I might have to make more again tomorrow! Thanks so much for the great recipe!
