Dark Chocolate Peppermint Bites

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup coconut oil (like this)
  • 2 and 1/2 tbsp maple syrup or honey
  • 1/4 cup raw cacao powder (like this) (or unsweetened cocoa powder), sifted
  • 1/4 tsp unrefined salt
  • 3 drops Peppermint Essential Oil (*see note) OR 1 tsp peppermint extract (like this)

Instructions

  1. In a double boiler, melt almond butter, coconut oil, and sweetener of choice until smooth..
  2. Add sifted cocoa powder and salt. Continue to mix.
  3. Turn off heat and add peppermint essential oil or peppermint extract.
  4. Pour into candy molds or into mini muffin tins and place into freezer to harden for at least 2 hours.
  5. Remove from molds and store in freezer in sealed containers, separating layers with parchment paper.
