From butternut to pumpkin to acorn, I’ve got you covered.  Winter squash is the PERFECT side dish during the cold winter months.  Here’s 40+ delicious winter squash recipes to keep you inspired.

Butternut, pumpkin, acorn, delicata, spaghetti, and kabocha.  I adore them all. I love their different colors and stripes, from pale yellow to green to the brightest of oranges. They are all staples in my kitchen this time of year.  They are cozy, comforting, and totally nutrient-dense.

Wondering how to cook some of these winter squash beauties that are showing up all over the local Farmer’s Markets and grocery stores?  While you can simply peel, chop, and toss in a bit of ghee and salt and pepper before roasting, there are so many other creative ways to get more of this winter superfood into your diet.
