Dark Chocolate Peppermint Bites

My kitchen has been a busy place this week.  I have been thoroughly  enjoying the holiday cooking season.  These no-bake little delights are my latest creation:  Dark Chocolate Peppermint Bites.

I love the holidays.  Family, friends, and lots of delicious foods.  Our family has been blessed enough to have the pleasure of attending several holiday gatherings with the people that we love.  One of the things that I appreciate about our community is that we always celebrate around food.  I love pot lucks where everyone brings a little something to share.

This year for holiday dinner, I have volunteered to bring a salad and dessert.  I have decided to bring my Kale Caesar Salad wit Pomegranates and Dairy Free “Parmesan” Cheese.  It has become one of my new favorite salads. I also wanted to bring a simple dessert that would be easy to make and had a special holiday touch.  This is what I came up with:

These little Dark Chocolate Peppermint Bites literally take less than 10 minutes to throw together.  They are loaded with healthy coconut fats, protein-rich almond butter, and antioxidant-rich raw cacao.  And the taste is rich and decadent with just the right amount of peppermint flavor.  Did I mention that they literally melt in your mouth?

I used cute little candy molds to make them.   You can also use mini muffin tins lined with muffin liners.  Or if  you don’t have either of those things,  can also just pour the mixture into an 8×8 baking dish lined with unbleached parchment paper  Once completely solid, remove from pan and cut into desired sized bars.

Store in freezer.  They will begin to melt at room temperature.  Enjoy!

Dark Chocolate Peppermint Bites

Ingredients

Scale
  • 1/2 cup almond butter
  • 1/2 cup coconut oil (like this)
  • 2 and 1/2 tbsp maple syrup or honey
  • 1/4 cup raw cacao powder (like this) (or unsweetened cocoa powder), sifted
  • 1/4 tsp unrefined salt
  • 3 drops Peppermint Essential Oil (*see note) OR 1 tsp peppermint extract (like this)

Instructions

  1. In a double boiler, melt almond butter, coconut oil, and sweetener of choice until smooth..
  2. Add sifted cocoa powder and salt. Continue to mix.
  3. Turn off heat and add peppermint essential oil or peppermint extract.
  4. Pour into candy molds or into mini muffin tins and place into freezer to harden for at least 2 hours.
  5. Remove from molds and store in freezer in sealed containers, separating layers with parchment paper.

*NOTE: Please only use pure, food-grade therapeutic essential oils for cooking. Many essential oils that are sold are not 100% pure and can be adulterated. These are not meant for consumption.     This sounds delish! I’m a bit confused though as the directions say to add the cacao and salt but the ingredients doesn’t list salt?? What kind and how much salt is used?? Thanks!!

    Could this be made with natural peanut butter instead of almond butter? I wonder if that would taste good with the peppermint…

      Yes, but it will change the flavor profile. I haven’t tasted it with PB. 🙂
