4 Ingredient Piña Colada Ice Cream (dairy free)

This Piña Colada Ice Cream is my dairy free version of coconut pineapple heaven. It’s creamy, rich, and has me dreaming of warm, tropical places. You won’t believe it’s only 4 ingredients and  just a few minutes of prep time. 

Like any decent European, I like to travel, and do it as often as I can. I grew up traveling with my family all over Europe and have continued the tradition with my own children.  While my parents exposed us to the culture of Paris and the Louvre and places like Rome, the Vatican, and London, my children have mostly frolicked on countless tropical beaches in warm weather destinations.

Traveling has taught me so much about the world, about people, and about myself.  When we see other cultures and other ways of living and being, we are humbled and realize that our way is not the only way and that there is much to be learned in this life. I give thank for all of the amazing experiences that I have had and find myself grateful for my life as I recognize how privileged I am to live where I live, to have access to the food that I eat, and to have the rights as a woman that I enjoy.

So, in honor of my love of travel, I am sharing a tropical treat today: dairy free Piña Colada Ice Cream.  A simple mix of  creamy coconut and pineapple, naturally sweetened, and totally delish. You will feel like you are in a tropical paradise.  OK, maybe not. But it may inspire you to go to one.

Like I said, this recipe is so easy to throw together.  I highly recommend using the ripest pineapple that you can find for best flavor. Canned pineapple works too. Once you make the ice cream mix, be sure to chill it before pouring it into your ice cream maker. THIS is the one that I use.  I love it.  So easy to use.

Now I am off to finalize our family’s winter travel plans.  I am a firm believer that frequent travel keeps the soul healthy.  Anyone else agree?

Ingredients

Scale
  • 2 can full fat coconut milk (where to buy BPA free coconut milk)
  • 2 cups chopped pineapple (canned works too)
  • 1/2 cup real maple syrup
  • 1 1/2 tbsp fresh lime juice

Instructions

  1. Place all ingredients into blender and process until creamy smooth. Chill in fridge.
  2. Process according to the instructions of your ice cream maker. (I use THIS one.)
  3. Serve immediately as more of a soft serve ice cream OR freeze for 1-2 hours to firm up a bit. Enjoy!

    Is full fat coconut milk the same things as evaporated coconut milk?
