Need a quick and easy snack idea? These crispy Salty and Sweet Coconut Chips are just the thing!
My work requires that I travel sometimes, and when traveling, I find myself strolling down the aisle of the local health food stores looking for healthy snacks that are easy to carry with me on the go. That’s when I got introduced to my new addiction: COCONUT CHIPS.
Have you had these things? If you haven’t, you really should. They are the BOMB!
All it really is is baked coconut flakes (the big ones) . You can add any flavor that you like. This recipe is a salty and sweet version sweetened with either maple syrup, honey, or coconut sugar. I sort of have a thing for salty sweet.
But what you get is a crunchy snack that is so good, you may end up eating the whole batch. Seriously. But don’t feel bad, Coconut is good for you. It is loaded with healthy fats and immune boosting lauric acid. You can crunch away as much as you like.
I mostly like to eat these right out of the jar. They satisfy my sweet tooth and give me something crunchy to eat. You can sprinkle them on top of your smoothies, soups, salads, or anything else that makes you happy.
And feel free to experiment. If you don’t want to add the sweetener, skip it. They taste amazing with just the coconut oil and salt. We have also added cinnamon and vanilla extract before. You can try a more savory batch with cayenne, chipotle powder, or smoked paprika. I even made a batch with bacon grease and salt. I’m drooling just thinking about it.
Have fun with it!

Katja
