Salty Sweet Coconut Chips

Jump to Recipe

Need a quick and easy snack idea?  These crispy Salty and Sweet Coconut Chips are just the thing!

My work requires that I travel sometimes, and when traveling, I find myself strolling down the aisle of the local health food stores looking for healthy snacks that are easy to carry with me on the go.  That’s when I got introduced to my new addiction: COCONUT CHIPS.

Have you had these things?  If you haven’t, you really should.  They are the BOMB!

All it really is is baked coconut flakes (the big ones) . You can add any flavor that you like.  This recipe is a salty and sweet version sweetened with either maple syrup, honey, or coconut sugar.  I sort of have a thing for salty sweet.

But what you get is a crunchy snack that is so good, you may end up eating the whole batch.  Seriously.  But don’t feel bad,  Coconut is good for you.  It is loaded with healthy fats and immune boosting lauric acid.  You can crunch away as much as you like.

I mostly like to eat these right out of the jar.  They satisfy my sweet tooth and give me something crunchy to eat. You can sprinkle them on top of your smoothies, soups, salads, or anything else that makes you happy.

And feel free to experiment.  If you don’t want to add the sweetener, skip it.  They taste amazing with just the coconut oil and salt.  We have also added cinnamon and vanilla extract before.  You can try a more savory batch with cayenne, chipotle powder, or smoked paprika.  I even made a batch with bacon grease and salt.  I’m drooling just thinking about it.

Have fun with it!

xo,

Katja

Ingredients

Scale
  • 2 tbsp coconut oil, melted (I like this brand)
  • 2 tbsp maple syrup, honey, or coconut sugar (like this)
  • 1/2 – 3/4 tsp unrefined salt (I use THIS brand)
  • 3 and 1/2 cups large coconut flakes (THIS bag is exactly 3 and 1/2 cups)

Instructions

  1. Preheat oven to 325’F. Line a large baking sheet with unbleached parchment paper.
  2. In a large bowl, combine melted coconut oil and sweetener of choice. Pour in coconut flakes and gently mix until completely coated. Sprinkle on salt and gently mix again.
  3. Bake on prepared baking sheet for 5 minutes. Flip with a spatula and bake for another 5 – 7 minutes, flipping every 2-3 minutes. The coconut flakes will begin to be golden brown. Watch carefully as they burn quickly.
  4. Cool completely to allow coconut chips to crisp up. Store in an air-tight glass jar.
